Go 3 phase if you can. Motors are cheaper plus you use smaller gauge wire to run a motor. which save you money.
At one sight only have 2 bins and 3 - 3 phase motors but the 3 phase motors jump into action as soon as turned on.
At our other sight we have 400 amp 3 phase service to operate 11 bins including the dryer which is Natural Gas fired.
