Western Oregon | I would rather have an old hen baked in the oven than a sloppy, slimy, mushy, no flavor, bought fryer dipped in Clorox. I have Orpington chickens for eggs and let them set. Take longer, a little oats as scratch, rest is bugs and grass. Take longer but much better flavor, very little fat yard bird. Baked, we put in 450 oven, turn down after 10 minutes to 325 until done. Juices seared in and cooked slow. Fried chicken gets soaked in buttermilk over night, then dredged before frying in covered cast iron skillet....James | |
