12 or 32 acres of pasture is not enough for 40 cows no matter how sharp your pencil is or how good your grazing skills are.
I would keep doing what you are doing and utilize the pasture and cover crop ground as recieving pastures. Split your 80 fininshing into two 40 hd pens or four 20 hd pens and fill as you wish. Recieving cattle and putting them on pasture for a week or two will eliminate a lot of stress and sickness in my experience. Somthing to think about.
