Subject: RE: What is it then?

People can have the "broiler" chicken if they wish. Make mine a fryer!

When I was a kid, my family raised chickens. "Free range", by the way, before it was in fashion ;-)
We had friends from town who also helped us harvest them. We always bought some chickens unsexed, and sorted the roosters off to put in another chicken coop out in a field away from the hens.

One of the town folks helped us harvest the fryers in mid summer. They brought an old LP burner set up so we could heat water, do scalding, pluck feathers, and take care of the singeing outside. Gutting, cutting up, and storage in freezer bags was done at the kitchen sink. Both of us filled the deep freeze.

The other folks from town wanted broilers. I hated letting the roosters go that long. They got big and heavy towards late fall. Had to let the roosts down to the floor as heavy chickens can not fly. Some of the heavy meat type chickens got so big they were starting to cripple from packing too much weight around. Gazillions of pin feathers to pick. All this to end up with chicken meat that I only considered fit for soup.

I really didn't mind dealing with fryers. But I certainly hated all aspects of the broiler business, "free range" or not.
