USDA Sausage Recipe. 4# ground trimmings (1/3 fat 2/3 lean). Add 5 Teaspoons salt, 1 teaspoon sugar, 2 teaspoons ground pepper, 4 teaspoons ground sage, and (optional) 1/2 teaspoon ground cloves or 1 teaspoon ground nutmeg. Mix well. Bulk or stuffed in casings.
