Have to figure it on hanging weight plus they pay the butchering charge.Thats the way we did it till the chef went to work in a different city.Was s sweet deal because then you were not stuck with the less prime cuts.He had it cut into primal cuts and he did the rest by himself.Have to check what the local auction barns are at in price.What I know is when I drive thru Hannible MO The prices down there in Mo are about .50 a pound more than here in WI at the auction barns
