Manson IA | Pork loin (10-12lbs or so) or pork tenderloin (2-3lbs)??? Big difference....
Simple pork loin is rub it up generously with your favorite rub, on a pellet smoker start low at about 170-180 (pellet smokers produce more smoke at low temps) for about an hour. Turn it up to 200-225 or so. Until internal temp of 140*. Remove from smoker and wrap in foil for about 30 minutes. It'll be at least 145 internal and nice and juicy after the rest. Slice and enjoy....
Tenderloin I don't do very often but i've done it hot n fast on the grill or low n slow on the smoker. They don't take long being so small. But again do not take them over 145* internal or they will be shoe leather... | |
