Good responses already. Tenderloin is a different cut than whole loin. tenderloin won't take very long to smoke but really, I'd prefer whole loin. I cut and marinated tenderloin in a shish kabob a few years ago and that was noteworthy. Very good. I cook quite a few whole loins. Low and slow. My charcoal smoker has a water pan just above the charcoal that adds steam to the smoke. I think that helps. I throw some apple wood chunks on the charcoal. You could eat the smoke! 7-10# loins I usually cut in 1/2 and season them with olive oil a rub. This smoker takes 2-3 hours. I sometimes take it off and slice, then finish in a crock pot with a little water. Never dry. Don't over cook. I worked at JBS and the lab lady told me that they hadn't done a trichinosis test in 25 years since they had never found any. I like to say, there can be a lot of experiments and while some may not be repeated, there is really no failure! Enjoy.
