Centralia, MO | We just bought a Pit Boss vertical smoker and have put it through the initial burn out so we're ready to actually cook some meat. Gonna start with a whole pork tenderloin. We've watched multiple u-tube videos and have come to the conclusion that the cooking temp should be somewhere between 1800 and 2500 F and try to pull off of the heat at about 1450, so we're going to set it at 2250 F and go from there. I'm thinking the cook time should be about 2 to 2.5 hours, that sound about right? I'll wrap the loin in foil and put it in a cooler for an hour or so when pulling it off of the smoker. We don't really care for a lot of sauces and rubs so we thought we'd just start with salt and pepper. I never could understand cooking a really good piece of meat and then try to make it taste like something other than "a really good piece of meat"! Any comments would be appreciated. TIA, Jeff |
