I am still new to briaket, have only done 10 or so recently. But seems if I cook till probe goes in like soft butter it's always just right. Just seems if it pulled and wrapped and put in a cooler it will end up cooking more and goes too far. Once I figured that out now I need to learn when to pull just before it's "ready" so if it sits it's just right. Since I don't know it's eat when it's ready. Not sure if I could cook for a particular time to eat..

I have tryed pulling at a set temp but as one of my friends says, seems no 2 briskets will be ready at the same temp.
