Your probably gonna have to kick it up to at least 225 to get it done.  You gotta melt the fat down to get it to melt in your mouth.  I take them off when they hit north of 190, sometimes up to 205 internal.  When I get down to the very end sometimes I just turn it up to 250 to get it done.
