I agree. If something needs to be "spiced up" I'll do it myself to my taste. Lots of times when I order a steak the waiter/ess will ask if I want steak sauce. I always tell them that if the steak is any good the only thing I might need is a little salt.

On the other hand, I really like a hand rubbed prime rib - if the chef knows what he/she is doing with the spices and herbs.
