We cook a whole pig a couple times a year. We did it for my daughters wedding reception. Great eating. Most here use propane grills. We like to cook at 300 degrees for 7 to 8 hours. First hour the pig is cooked skin side up, then flipped and the rest of the cooking is skin side down. It is a lot more variable with charcoal. But you will most likely be looking at at least 8 hours....when the meat pulls off the bones easily...you are good to go!!!! Some great eating!!!! Enjoy!

Edit to add...we call it a Pig Pickin in my neck of the woods!!
