we did that for our wedding 16 ears ago. fil had big cooker used Applewood and hickory 200 lb hog and 4 turkeys . took long time to cook so do day before take meat off bone and get bunch of roaster pans to put it in. have plenty of help and beverages of choice . hog was on spit and we wrapped chicken wire around it to keep meat from falling off
