It's amazing how covers even without legumes cause residue to breakdown. My corn grain fields with cereal rye are much more manageable in spring than without. Covers after wheat get rid of the "matting" that is common the next spring if just left chem fallow. You're right, there's a lot going on in the biology that one wouldn't see or understand unless you try it. It's science, not magic, but seems like magic because it's a different way to farm than has been preached for decades. And then we get labeled for being preachers of notill/cover crops. Go figure, huh?
