How many 750 acre farms can you fly in a day/week? Do you have upload capacity to move huge data sets up to the cloud? How many hours will it take to process data from those flights? How many hours in a day? What if you simply spent those hours in the field scouting?
Your area isn't unique in field or farm size. Just because you don't see how the fixed wing service providers can do it cheaper than you doesn't mean they are not doing it. Satman is pointing you in the direction many have traveled in this service. I think you will find out what you can and can't do in this space pretty quickly once you start flying and processing images to deliver the list of images and services you had in the OP (RGB, NDVI, population/stand counts, elevation). Maybe the big P has it figured and can get you there quickly. I see a new influx of agronomy experts in the region created by hanging out an Encirca shingle! Maybe they can do the same in the remote sensing business.
Using your Phantom as a scouting tool may improve your efficiency for that task, but it doesn't eliminate the need to have boots on the ground. Are your interests are better aliened with the non-ag imagery market? The software you mentioned (other than Drone Deploy) are not going to do much good in the ag/crop diagnostic arena.
