What I do is season the roast, put in the crockpot, add onions and potatoes, 2-3 cans of beer, and set on low. My crockpot automatically switches to warm after 8 hours so I usually set overnight so I have a meal ready for the next day. The beer doesn't dry it out like water does IMO.
How do I keep pot roast from drying out?
