I prefer a chuck roast. There is a good amount of fat in them. I put it in the oven in a roasting pan at 285 degrees for about 5 hours. I add a can of beef broth a can of diced tomatoes and one onion. I salt and pepper to taste. I also add a bunch of carrots and potatoes so the entire meal is made in one pan(less dishes to wash).
