I recently did a 8 pound prime rib much along the lines Chimel suggested. I prefer mine more done so about 140 when I pull it out to rest.
*** The high heat and turn the oven off method will not work for me as our oven goes to a cool down mode when turned off. 275 is the lowest setting. ***
I used 450 for about 1/2 an hour and then 325 and put a temperature probe in to watch the temperature.
This also allows the addition of other things to the pan as well as basting if necessary. I use clarified butter for basting if it gets dry.
I also precook the potatoes and carrots I added about 1/2 way on the stove and then use the last hour around the roast to baste and brown. I also use onion, shallots and garlic in the drippings with some extra clarified butter if it is too dry.
When finished you can use the drippings and fond to make gravy or au jus as well a little in the cups for Yorkshire pudding.
