I used to wonder the same thing, until I did a bit of research. Your coffee maker has to have the temperature at approx. 180 degrees if I remember right. If its higher, it burns the grinds and gives it a bitter taste, especially after sitting awhile in the pot. If the water is not hot enough, it does not melt off the coffee off the grinds properly. Next is the type of coffee. I know of no restaurants that use Folgers or Maxwell House, which are the cheapest coffee's made, therefore the most sold. Next is the coffee maker. After trying about 20 different brands, etc., I bought a Bunn commercial type, and seen the difference immediatley.
