Note how long the local diner takes to brew a pot and how long yours runs. I'd bet you have one of those squirt-squirt-squirt machines that take their time. You end up getting different things out of the grounds than they do because the grounds sit in water longer. A lot of people don't notice, they don't seem to taste anything (hence the creation of light beers) but others can and you are in the later category.

I would say the solution is to make your coffee the same way the places you like do it. Get a Bunn.
