We totally gutted our 100 year old house removed some walls made rooms bigger. We had fairly new steel siding so left that but all the plaster was removed right down to the studs. When removing the carpet and tile we found 100 year old maple Harwood floors that just needed a refinish job. We totally re wired the house and installed internet and tv wires at the same time. Plans changed as we went as when the plaster was removed you could see what wall could be removed and how to work with the structure and not weaken it. It had a separate dinning room and living room we took out the wall between and have one big dinning living room. Also took out a unneeded halway next to the staircase that made it feel more open and changed the bedrooms upstairs from 4 bedrooms into 2 and one very large master bedroom. removing these walls required some headers to be installed to replace the load bearing walls. We also bought a couple of 48 foot semi van trailers to put our furniture and things in while the house was under construction. I am glad we restored it turned out nice.
