Good luck to you and your wife. We finished remodeling our house which was built in 1899. As far as being the general, and you probably know this, make sure you pick subs that know what they are doing. What they will be doing will likely be more of a challenge than new construction, because of the surprises you will run into when you start tearing it apart. So I would look for guys with experience and have a good reputation/references. Be clear with them up front on what is expected and the quality of work you expect, and give some examples so when there is an issue, and there will be, you have that to go back to. We put down on paper everything we wanted done, and that helped both us and the contractor to make sure we thought through what we wanted. Pictures of what you like will help your contractors. ie: pictures of cabinets you want built.
One thing that was well worth the expense was spray foaming the walls. We left the siding on on the exterior, and the planking on walls left gaps for wind to whistle through; spray foaming sealed that right up.
Are you trying to keep the era of the house? If you are, schoolhouseelectric.com had some neat lighting fixtures, but is a little spending.
My wife likes her apron/ farmhouse sink - shaws original by rohl, and the bead board ceiling in the kitchen.
