I don't worry about what the "true bbq'ers" like ;-)
I'm cooking for ME, not them. I cook it the way I like it, and so should you. I don't get into competition cooking.
If I may suggest it, try the St Loius style ribs once.
And pork butt.
And beer can chicken.
And spatchcocked turkey and chicken.
And.........
