We don't do the baby back ribs any more, "here". We do St Louis style.
Green Mountain pellet grill.

Marinate for 3 hrs.
Smoke for 4 hours at 180 degrees, turning every hour.
Pour bbq sauce on the racks and completely wrap with foil.
Cook on grille for 2 hrs at 225 degrees.
Take off grill and let rest for 1/2 hour.

Meat falls off the bone. Might go faster with baby backs, IDK, so my vary cook time.
Like I said, we don't do baby back any longer. Too much bone, not enough meat.
This is what we do, and we like it this way. Your taste may vary........
