I agree with Ben. The spuds need to be cooler than 57 F and they need to be kept in a humid space. But if they get too cold they will get sweet.
They also need to cure so that the skin sets before you try to store them. And don't store them with apples or onions. Commercial growers kill the vines a couple of weeks or so before they harvest the potatoes to set the skins.
