I store potatoes in a small room off my insulated garage, in slatted crates set on 3/4" wood lathe, right on concrete floor to keep air flow. Also have a 4" pipe vent from near the floor through outside wall under eave to regulate humidity. I also have a fruit house where we store canned goods and do the same. Potatoes need humidity but not moisture. The fruit house is insulated with sawdust. The other 1/2 is apples and pears, 30-40 bushels of them. It also has our little 12v freezer in there. It has a 6" pipe vent near the ceiling, through the roof. We eat a lot of potatoes, I put 6 or so every day in the oven of the wood stove in winter. Have for dinner, then fry for breakfast the next morning, extra can be potato salad or twice baked....James
