Storing Chip stock potatoes is an exact science to avoid brown chips from sugar issues.I think you can go 33 degrees for table stock.Last I knew.Some store to 32 for seed.Chip stock needs 45 degrees at frying time.Do not put them in there to drop all that temp at once,they will be ruined.need to drop a couple degrees a day.
