If you're set on smoking I'm sorry but can't help you. If your open to other options I have had goose summer sausage, which was quite good. Granted, this was wild goose and he was trying utilize his kill and that's why I throw it out there as an option. I'd personally try using it as "filler" meat in a sagey-type sausage, as mentioned above. Maybe breakfast sausage or a cajin type sausage.
