| Personally, I grew up on a poultry farm with thousands of chickens - stinking, dusty, cannabalistic chickens! So for me, I don't care for turkey, chicken, or the likes. I do one for the holidays, and the gang loves it. I inject it with a mix of Balsamic vinegar and Frank's Hot Sauce. We cook it in an Infrared fryer - looks like an oil fryer but without the mess. It is tender, moist, and the family is on it like a pack of dogs on a three-legged cat! I'm the only one out of the 15 or so at holiday dinners that doesn't eat it. Now Christmas dinner, along with a turkey, I'll be cooking a ham from my good friends at Welter's Meats, and have yet to taste any better. But the bird is for all the rest! | |
