The first goose (wild) I had was 40 years ago and it was served sliced on a plate with hot mustard and soy sauce on the side. It was at a Christmas party and I took a couple slices every time I walked by the table. It was very good. I've yet to find goose that tasted so good.
I bake my wild duck and goose topped with onions, mushrooms, a bit of jalapenos and bacon strips. Thank God for bacon.
