coast of Maine | Friend gave me two all cleaned just a couple weeks ago, Canada Goose shot on our lands.I knew my SIL could cook game really well.Gave him the duty.He cut breast skin in center ,stuffed spicy sausage under skin,sewed it back up.Marrinated every 10 minutes while cooking with homemade orange marmalade(a job to make itself),Came out really good looking,sliced up nicely,,,flavor was actually way better than any wild goose I have eaten.But the best part was the sausage,,so with all the hours of effort still it was a bit gamey. not offensive though,,,tough a bit, but sliced ok.Thinking we should have cooked at 320 instead of 380 to make less tough
