Central iowa | I like a 90/ 10 mix of beef back fat. It's tough to make a patty stick together. When I do make patties I wrap them with a slice of bacon or 2 and toothpicks and cook them rare and eat like a hamburger steak. With the 90/10 if you brown the burger for chili, tacos or anything else you dont have to use oil and there is no grease to drain. | |
