Try some different recipes in a very small batch and fry up a burger to see which you prefer. Morton's tenderquick will make the sausage red or cured. You will have an enjoyable time. When you smoke it make sure you get the meat hot enough to cook it 140 degrees or it won't keep very long even in the freezer.
