Pork and Beef that were fed the way they should have been are ready to be processed as soon as the meat is chilled enough to make nice cuts. Most pork is ready to cut up as soon as it is killed. Beef usually takes close a week to get stiff enough to make nice cuts of meat. If you raise animals that are not fed correctly then they need to hang in refrigeration longer. The longer they hang in the cooler the less product goes into the freezer.
