Shouldn’t be a problem to get an in use cover for an2 gang box.

If your switch is mounting like a regular 15A, single pole switch in a house, you could mount the switch to one side of the 2 gang box, and leave the other side blank. Should be able to make that weather tight, one way or the other. This unused side would give room for bending the wire around.

Dont think I’ve seen switches that fit in single gang boxes, that have a high enough amperage rating, to require #6 wire.
