I had never considered the effect of the viscosity of water on yield. Really, I never think of water as being very viscous, only either frozen or liquid. Partly because I'm generally not very good at science, and mostly because I think of hydraulic oil or syrup as getting very viscous when cold. Comparatively, water is not very syrup like before freezing. But it is enough to effect the translocation of energy and nutrients. I only ever considered the effect of freezing rupturing the cell walls. But now I learned something here!
You're right though, the market won't care. But someday it will come to learn. If not by the USDA, then by the natural tightening of supplies next spring and summer from an artificially low price causing higher usage.
