I'll second whoever mentioned the Acorn table, or Weldsale or Bluco table. They are very expensive, but beat anything you can make. Probably hard to justify if not making a living with it every day. I'm 6' tall and 34" seems to be the right height for me, but that's kinda all up to you. I personally don't like one too tall because usually whatever I'm working on has some size to it as well. I would seriously consider going well over 3/4" thick while you're doing it. I built a 6' X 10' table a few years back and used 2 1/2" thick plate for the top. Still more chance of it pulling or warping than the cast top on an Acorn or Weldsale table, but it worked well.
