I used to give some HRS wheat to a gal, yrs back, she used to bring me a couple loaves back . . . .
She used to mix honey in for sweetness . . . . Don't know the recipe though.
Boy that bread was great!
You could find some HRS White wheat and see how that affects the color of your bread.
It'll be a trail and error time for you, and maybe a few pounds gained also. lol  Looks good, nothing better then hot bread out'ta the oven! Try it with sharp cheddar cheese, when out of the oven.
Edit: corrected for accuracy . . .  Hard red spring wheats are generally the highest proteins wheats. Hard red winter wheats have lower protein then HRS ~ Millers will mix lower protien wheat (HRW) with Higher protein wheat (HRS) to get a specific protein flour and / or specific use flour. At least in our northern grain growing region.
