Well, there's a local grocery store that has a "Cost + 10%" business model. They put what their purchase cost is, add 10% to it and that's consumer cost. Chicken breasts were on special at $0.95/lb + 10% and bottom round was on special for $2.33/lb + 10%.

It's not a problem selling all the steaks at 10 bucks, but bottom round is a cut that I would call more of a "family cut" and by that I mean it's broken down into meals that a family would cook at home. So, family of 4, 1/4 lb of meat a day, is 7 lbs a week for the supper meal. $7.32 for the chicken and $17.95 for the beef. $10/week difference... for the low value beef cut and a decent piece of chicken. Put an $8/lb steak supper in there, and it goes even further.

I'd say beef demand has been extraordinarily strong given the pressure the other meats put on it.


That's what is so aggravating - demand is strong, imports are up, supply is steady to low and prices have fallen like a rock.
