We have a local restaurant supply store that also sells retail-ish at their warehouse (Martin Brothers). We bought pulled pork ready to re-heat for child #1's graduation. Worked great and we threw the extra in the deep freeze. I found one package 3 years later and it was still edible.

Child #2 wanted Italian Grinders--my recipe. I made up 30 pounds or so ahead, froze in Ziploc bags and thawed as needed. The extra stayed in the freezer. That worked good too.

Child #3 decided a pasta bar would be good. We made it work, but I wouldn't suggest that one.

Our rule has been, this event is a celebration of the kid. If they and or their friends can't eat or drink it, we don't serve it, so it's been punch or something for us.

We've always swept the garage out, borrowed some tables or chairs from whoever has them in your area and called it good. Covid made it a real PITA last year! Hope it all goes well for you.
