I agree. Bread made from "real" whole wheat is heavy and does not rise well. My wife tried many times and it was so-so edible, but not something most people want to eat. She even tried adding additional gluten to get it to raise decent without much luck. Now mix it half and half with white flour and it can become something more people would not dislike quite as much. She could make some decent bread with half and half.

She ground her own flouer. Tried both hard and soft varieties. We would eat it but most people wouldn't.

But we don't eat any of it anymore because it raises my blood sugar and I am using diet to control my diabetes. So any type of wheat is out for me.
