When wife was making a lot of home made bread she liked to use a bread machine to make the dough. Then she would proof it and bake it seperately. But she liked the consistancy of the bread machine for kneading the dough.
On a side note about that, we went through a two day baking and milling course (designed for county agents to be able to tell potential students about the KState course) and at that time they used bread machines to test out flour because of the consistancy of the machines doing everything exactly the same every time. Wife never liked the loaves that came out of the bread machine (I thought they were "ok"), but she sure liked the way it made dough easily and consistantly.
