When I made some for birthdays or mothers/fathers day, I made a solid top crust for the cover, but used a knife to cut out "happy birthday" or which ever day it was. Added a unique flare.

I'm with you on the lard crust and it isn't any worse for you than Crisco. If you are going to use a solid fat, lard or butter is better for you than Crisco. I also put a tsp of sugar in my crust. Makes it taste even better. Use Granny Smith apples too. My grandson says I make a mean apple pie. He has a birthday next week and that is what he wants instead of a birthday cake.
