NW Ohio | That must be some steer. I've never seen a steer yield 61% actual meat from live weight. It's usually between 33% (Holstein) to maybe 37% for black/colors of actual meat. Sure, they may dress out (hanging) close to 60% (usually between 55% and 58%), but there's a lot of weight in the bones.
There's no way you got 780 lbs hamburger from a 1280 lb steer. (I've butchered many).
You had $2280 in the animal, so at BEST 40% = $2280/512 lb = $4.45/lb
I just shake my head when people want me to butcher an animal and put it all into hamburger or maybe just keep the T-bones and not the other cuts(unless it's a downer or old cow). | |
