I butchered a steer couple weeks ago and ground it all into hamburger. Using a price of 190 dressed figured it came out to 2.90 hamburger (non federally inspected) Whole thing.


How so?

1.9 carcass + .6 processing= $2.50 hanging.

$2.50 ÷ 60% (40% trim loss) = $4.17/#
