n.c.iowa | A friend of mine goes salmon fishing up on the Russian or Kenai river every year. He used to get about half of their catch brined and smoked by a local. It was some kind of a Cajun based brine, stuff would literally melt in your mouth.
guy died a couple years ago and never passed his recipe on. Been trying to figure it out, not there yet.
