Kingston,Mi | I have been doing it as a blackened salmon, Had it at Beagio's new place, liked it so found the recipe for the rub on line. Hot cast iron skillet, oiled the salmon, rubbed the inside first with the rub, 2 min. on the skin side, flip and do 4 mins on the inside, peel the skin off, oil and add rub to that side, flip once more for 2 min. for a total of 8 minutes in the frying pan. Can use a creole rub like Zatarain's.
For Sonic, I would hazard a guess that it is Coho salmon from the north sea coast (Great Lakes) as Kevin is about 15 to 20 miles from Lake Huron in 2 directions.
