If you have the skin on one side easiest,if not ok.heat great pan to near hot,little bit oil,lay salmon skin side down,season on top liberally(salt pepper only is ok )put lid on pan ,turn on the fan as it will steam and smoke,lift lid after a few and chuck in 1/4 cup water,it will steam and spatter like mad,re lid,keep heat on med,do not turn,check for done ness,slip spatula between fish and skin,skin will be adhered to pan usually,serve with fresh herbs or eat cold next day,easy as heck ,cant ruin...only need pan ,lid ,spice,water,salmon ,stove.Cast iron will work or scan pan that takes heat
