There are some great stories about sourdough bread.  The Boudin Bakery in San Francisco started back in 1849 during the gold rush.

They are still using the mother dough from the very beginning.  I have seen it, it is one massive dough ball.   It is on display at their bakery on Fisherman's Wharf.  As you may know yeast is a fungi that can grow for many years if you feed it....
